Chocolate Peanut Butter Protein Balls!

Road tripping has quickly fallen back into favor as a preferred method of travel due to the pandemic, allowing us the freedom to travel and leave our homes while still offering us the option to socially distance. Hot off my summer road trip to the mountains I thought this was the perfect recipe to share for August. It is easy to fall into over indulging when food options are limited and low blood sugar attacks set in on a long stretch of highway.  These little balls pack a powerful combo of flavor and protein to fill you up and satiate your cravings as you road warrior your way to your next destination. Easy to make, accessible ingredients (most of the ingredients our pretty normal kitchen staples) and delicious you can’t go wrong with packing this snack into the back seat cooler as you head out on your next adventure! Keep in mind you can sub in a lot of other ingredients such as different nut butters, dried fruits, etc. as you experiment with this recipe.

Ingredients:

1 cup rolled oats

1/3 cup honey

1/2 cup peanut butter (smooth not chunky!)

1/4 cup chopped dark chocolate

2 tablespoons chia seeds

1 tablespoon chocolate flavored protein powder

Recipe:

Combine all ingredients into a large mixing bowl

Hand mix with a large spoon until all ingredients are mixed evenly together

Cover bowl and refrigerate for 30 minutes

Scoop the chilled mixture into balls using a tablespoon

Roll in between palms to make each individual ball

Store in container with airtight lid and refrigerate or keep chilled until ready to eat
