This kale salad is always a crowd pleaser! The good news is that this salad is easy to make, and it holds well in the fridge for delicious and nutritious leftovers.
The beauty of this salad is that there is no fancy tools or cooking techniques needed, it pairs well with a multitude of proteins and flavors AND it is jam packed full of nutrient dense ingredients.
Make extra and store in the fridge for up to 3 days!
Ingredients:
2 bunches of kale or 1 big bag pre-washed kale
1 whole lemon
1 clove garlic
2 teaspoons Bragg’s liquid aminos
Slivered or sliced almonds
1 ripe avocado
Tahini
Dried cranberries
Instructions:
- Wash and trim kale if needed, pat dry
- Add chopped kale to large salad bowl
- Squeeze 1 fresh lemon all over kale and massage with hands until softened
- Finely chop garlic and mix in with kale
- Add in avocado and mix in well with hands
- Drizzle in tahini, mix well with spoon or tongs
- Sprinkle in almonds and cranberries
- Spray or drizzle Bragg’s Amino Acid
