Pumpkin Overnight Oats! 

Oh yes Thanksgiving is upon us here in the U.S. and pumpkin everything is likely consuming your social feeds and recipes as we prepare our feasts. This recipe is great because it incorporates pumpkin puree so if you have any left over after making that pie or casserole and aren’t sure what to do with it have no fear, pumpkin overnight oats are here! It is an easy recipe to throw together in 10 minutes or less and you will have a nutritious and delicious breakfast to grab and go (even if your morning commute is only 10 steps from the fridge to your desk).

Ingredients:

  • 1/3 cup plain Greek yogurt
  • 1/2 cup (heaping) rolled oats
  • 2/3 cup unsweetened milk of choice (I prefer Almond however this is your choice!)
  • 1 tablespoon chia seeds or ground flax meal
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons honey
  • 1/2 cup plain pumpkin puree
  • 1/2 teaspoon ground cinnamon

*Serves 4

Preparation:

  • Combine all ingredients in a medium-sized mixing bowl, mix well with a fork until all ingredients are blended together evenly
  • Scrape or spoon into a jar with a tight-fitting lid, ball jars are a great choice but this can be anything you have in your kitchen with a lid
  • Refrigerate for at least 4 hours, preferably overnight before eating
