What is there not to love about a sweet potato?
I am a sucker for a sweet potato in any form, they are versatile, filling, satiating and good for you! This highly nutritious root vegetable is a great source of fiber, vitamins and minerals that are rich in antioxidants. I love this recipe because is easy, inexpensive and you can make it your own by swapping out ingredients that fit your taste buds and wallet. All the elements of a great work week dinner!
Simple Baked Sweet Potato Recipe:
  • Preheat oven to 400 degrees
  • 1 sweet potato per person
  • Wash and dry each sweet potato
  • Line a baking sheet with parchment paper
  • Poke holes all over each potato with a fork
  • Rub each potato with olive oil and  salt all over the skin
  • Place potatoes on baking sheet
  • Set timer for 1 hour
  • Tip: you will know they are done baking when the skin is a little wrinkly, and you can easily slide a fork or knife in and out!
  • Allow potatoes to cool for a few minutes
  • Cut each potato in half down the middle
  • Lightly mash the middle with a fork to make a little fluffy
    • Here is the fun part: fill the inside with seasonings of choice in this recipe I used salt, pepper, Trader Joe’s Everything but the Bagel Sesame Seasoning blend, sour cream OR a healthier option is plain Greek yogurt and topped with home grown garlic chives!
  • Serve with your favorite veggie burger, fish or meat and ENJOY!
